3 ingredient pizza crust
Mix 1c. oat flour,  1/2c. water and seasonings of choice. 
To make pizza:
Spread dough onto non stick pan. Top with sauce and toppings of choice.  I used turkey pepperroni,  a little cheese, peppers and onions. Cook on 425 for 10 minutes.

Oh you know what time it is……Pancake time!!!!!! Hahaha any who I whipped these babies up this morning. 
Ingredients
4 tbsp high protein peanut powder
1 tbsp muscle pharm chocolate combat powder
1/2 c unsweetened applesauce (I use the little small single servjng containers)
3 egg whites
Truvia or stevia
Baking powder
1-2 tbsp water
Directions
Mix all ingredients together.  Using a tbsp spoon (2 per cake) spoon onto heated griddle. Cook 2 min per side, or until golden.  Top with syrup of choice. ( I used Walden farms chocolate and sugar free maple)

What’s your goals? I decided not to do a New Years resolution.  For one a lot of people don’t stick with it. I decided  to do monthly goals instead. This month is all about resetting my body. All clean eating and no cheats. I’ve had enough over the last 2 months. And my workout challenge is 100 squats and plank punches.  Work dat boot and abs. Also not pictured I’m not eating past 8. I’ve  been eating up til 12 at night which isn’t very good for your body. New year. New Goals. New Start.  Here’s to 2014♡

Eggplant Pizzas
Ingredients:
1 small eggplant
Pizza sauce (all natural)
Shredded low fat cheese
Turkey pepperoni
Directions:
Preheat oven 425.  Wash eggplant and slice. Place slices on a greased baking sheet.  Add topping. Bake for 7-10 minutes.

Sugar Free Syrup or syrup of choice
Directions:
Preheat griddle or skillet on medium heat. Slice bread into 4 triangles. Mix egg white & cinnamon. Dip bread pieces in mixture. Cook about 2 minutes each side. Remove. Divide peanut butter and bacon in between pieces. Top with syrup. 
Around 200 calories (depending on syrup)
Carbs: 26g Protein: 11g Fat: 4g

2 slices Sprouted Honey Wheat w/ flaxseed bread
2 pieces cooked turkey bacon
2 tsp natural pb
1 egg white
Cinnamon
Sugar Free Syrup or syrup of choice

Directions:
Preheat griddle or skillet on medium heat. Slice bread into 4 triangles. Mix egg white & cinnamon. Dip bread pieces in mixture. Cook about 2 minutes each side. Remove. Divide peanut butter and bacon in between pieces. Top with syrup.

Around 200 calories (depending on syrup)
Carbs: 26g Protein: 11g Fat: 4g

Since last night was Halloween and we had later dinner then we normally do I wanted something quick and easy.  I give you my version of a 5 minute pizza.
Ingredients:
1 low carb tortilla
1-2 tbsp sauce
1-2 tbsp cheese
Choice of meat and seasoning
( I used chicken and italian seasoning )
Directions:
Preheat oven to 425. Spray baking sheet with non stick spray. Place tortiila on sheet and spread sauce on top. Add cheese and the rest of the toppings. Bake 5-7 minutes. I made 2:)

2 tsp lemon extract

1/4 c almond milk
1 tbsp flaxseed (optional)
1/2 tsp baking soda or powder
Pure Via, Truvia or stevia to sweeten
Poppy Seeds 
*(You can also add 1 tbsp of natural apple sauce to make them more moist)*

Mix all ingredients. Spoon onto heated griddle. (Each pancake is about 2 tbsp of batter) Cook 2-3 minutes each side. Top with sugar free syrup or honey.

Breakfast Casserole
Ingredients:
1 lb ground turkey (or any other meat)
1 sweet potato (shredded)
1/2 medium purple onion
2 small tomatoes (diced)
2 handfuls of spinach
2 tbsp flaxseed 
12 eggs
1-2 tbsp minced garlic
1/2 tsp salt
1/2 tsp cayenne pepper
1 tsp chili powder
1 tsp onion powder 
Black pepper to taste
Directions:
Preheat oven to 375 F. Spray a 9X13 baking dish with nonstick spray and set aside.
Whisk eggs in a medium bowl and set aside.
Shred sweet potato using a food processor with shredding attachment or by hand. Set aside.
Cook ground turkey in a large skillet  until no pink remains.  Drain off extra grease. Add onion, shredded sweet potato, garlic, jalapeño, chili powder, salt, and paprika into skillet. Cook until onions are translucent (about 5 to 7 minutes).  Add tomatoes and spinach into skillet and cook for about 2 minutes or until spinach begins to wilt.
Pour beef and sweet potato mixture into the prepared pan and spread evenly along the bottom. Pour whisked eggs over the top, making sure to mix the eggs into the sweet potato mixture with a spoon or spatula. 
Place in preheated oven and bake for 30 to 40 minutes or until middle of casserole is set and edges are lightly browned. Remove from oven and allow to cool for 5 minutes.

Tip of the day:
Add MIO to your pancake mix. Yes the drink mix!!! It’s zero calories and taste amazing. I used black cherry in my coconut flour pancake base (coconut flour, banana & egg whites) and added 1 tbsp of chocolate chips.

Ingredients:

1 egg white
1/4 c coconut flour

Preheat oven to 350. Spray cupcake pan w/ nonstick spray or use liners. I didn’t measure how much I put in each, probably around 2 tbsp. It made 7 muffins. Bake for 23-25 minutes.

Yes the name is simple, reason being you can make so many alternatives. The ones above have blueberries & sunflower seeds. You can always make chocolate chip, strawberries, banana nut, just anything your heart desires. 
Ingredients:
1/2 c. oats
5-6 egg whites
1/2 c. blueberries
1 tbsp sunflower seeds
1 tsp vanilla
1/2 - 1 tsp cinnamon
Truvia or Stevia (this varies depending on how sweet you want them. I would suggest adding more just because your base is egg whites. You don’t want your muffins tasting like eggs)
1 tsp baking powder or soda 
Directions: 
Pre heat oven to 375. In a mixing bowl combine all ingredients. You can either spray a muffin tin w/ non stick spray or use liners. Using a tbsp spoon out 2 spoonfuls of mixture into the tins. (Mine made 6) Bake 10-15 min or until you see the tops turning. Let cool and enjoy. You can also top them w/ nut butter.
